Les deux couteaux sont forgés à partir d'acier inoxydable massif (X50CrMoV15 / 1.4116 / 420MoV). Un couteau de qualité standard a une dureté de 55-56 Rockwell, nous dépassons cela avec 58 Rockwell. Concrètement, cela signifie : un couteau plus dur peut être plus tranchant et conserver son tranchant plus longtemps.
